Recipe: Easy Pasta 3 Ways

Pasta is one of the easiest staples to master. It’s also one of my favorite dinners to cook because of how versatile, accessible and cheap it is. All you need at minimum is a can of tomatoes, a little salt and you choice of pasta shapes and viola! you’ve got a master creation waiting to be cooked.

Today I decided to do pasta 3 ways – stir fried, creamy tomato and classic tomato. Each dish uses around 5 ingredients, give or take a vegetable type here and there. You can use spinach or any other kind of greens or vegetable instead of silverbeet (aka swiss chard), mushroom, carrots of frozen mixed vegetables.

Pasta #1: Stir Fried Bowties (Vegan)

This pasta dish is a remake your of your bbq & mayo fried rice. But instead of using rice, we’re using pasta instead. If you don’t have BBQ sauce, you can substitute and use tomato sauce instead.

Also, if you use vegan mayo, this recipe is vegan friendly.

Ingredients:

85 grams bow tie pasta (about 1/6 of pasta from a 500g packet)
1 cup frozen vegetables mix
1 carrot (vegetable peeled into strips)
1/2 cup of mushrooms
1 tablespoon oil
1 cup of silverbeet
3 tablespoons Worcester sauce
3 tablespoons mayo
3 tablespoons BBQ sauce
salt & pepper to taste

How to:

Heat up oil on medium heat in a pan. Add frozen veges + mushrooms. Cook for a little bit. Add silverbeet. Add pasta. Add carrots. Mix together. Add sauces (worchester + mayo + BBQ). Stir until sauce covers all the pasta.

Serve. Add final salt and pepper to taste.

Pasta #2: Creamy tomato

Ingredients:

85 grams bow tie pasta (about 1/6 of pasta from a 500g packet)
1 carrot (grated)
1/2 cup of mushrooms
1 cup of silverbeet
150ml fresh cream
150ml diced tomatoes
sugar, salt & pepper to taste
1/4 cup grated cheese

How to:

Heat up pan on medium heat. Add silverbeet, mushrooms and tomatoes. Cook until tomatoes is reduced into a paste. Add fresh cream. Add a pinch of sugar and salt. Stir and cook until thick sauce. Add cooked pasta. Add carrots. Stir until mixed. Top with some cheese to melt.

Plate up. Add final salt and pepper to taste.

Pasta #3: Tomato bowties

With a little modification, this recipe is also vegan friendly. Just omit the egg and cheese at the end.

If you still want the protein, just add some tofu at the same time as the carrots in the beginning. It’s what I do sometimes for this particular recipe, along with supercharging it with extra veges.

Ingredients:

85 grams bow tie pasta (about 1/6 of pasta from a 500g packet)
1 carrot (cut into rounds)
1/2 cup of mushrooms
1 cup of silverbeet
150ml water
150ml diced tomatoes
sugar, salt & pepper to taste
1/4 cup grated cheese

1 egg

How to: 

Heat pan on medium heat. Add carrots, mushrooms, tomatoes and water. Stir. Add pinch of salt and sugar. Taste. If too acidic, add another pinch of sugar. If not acidic enough, add salt. Reduce down into sauce. Add pasta. Mix in with sauce. Add silverbeet. Cook until wilted.

Serve with a sprinkle of grated cheese. Salt and pepper to taste.

Additional: Fry up some eggs for protein and serve with pasta.
